Freeze-drying is a process in which moisture is removed from products in an especially gentle way. At first the material is going to be frozen and then dried under vacuum – the ice sublimates directly. This means it doesn't thaw, but instead turns directly into vapor. The result: color, taste, shape, and nutrients are almost completely preserved. If water is added later, the product shows excellent rehydration properties.
